Lima beans cooked in a pot
Ingredients
• 500 g lima beans
• 1/4 cup Premium Extra Virgin Olive Oil "Savoil Vivre" for serving
• 2 onions, in thin slices
• 2 cloves of garlic, sliced
• ½ tsp. salt
• ½ tsp. black pepper
• ½ tbsp. chili flakes
• 1 large Florina pepper, in rings
• ½ tbsp. sugar
• 1 bay leaf
• Parsley leaves, finely chopped, for serving
Execution
• Put the beans in 1 liter of water to soak for at least 6 hours.
• When they have absorbed the water, prepare the sauce.
• In a short pot, over medium heat, sauté the Premium Extra Virgin Olive Oil "Savoil Vivre", the onions and the garlic, along with the salt and pepper, and the spicy pepper.
• Add the fresh pepper, the tomato and the sugar and mix.
• Lower the heat and simmer for 10 mins in a covered pot.
• In a large pot, add fresh water and the soaked beans, after first straining and rinsing them.
• Make sure that the water covers the surface of the beans by approx. two fingers.
• Add the bay leaf and boil over medium heat.
• Once they come to a boil, skim, lower the heat, cover and simmer for 30-40 mins until softened.
• Strain and keep the water in which they boiled aside.
• Put the beans back in the pot.
• Add the tomato sauce and water (using the water in which they boiled), just enough to cover them.
• Shake the pot, so that the sauce goes everywhere.
• Set the temperature at the lowest scale and simmer in a half-covered pot for 15 mins.
• If you need to add more water, do it little by little, adding from the water used for boiling.
• Pour Premium Extra Virgin Olive Oil "Savoil Vivre" and serve.
