Green salad with pork pancetta
Ingredients
• 300 g pork pancetta, in cubes
• 200 g spinach, cut into pieces
• ½ lettuce, cut into pieces
• 1 red pepper, in thin strips
• 1 yellow pepper, in thin strips
• 1 spring onion, finely chopped
• ½ bunch of rocket, finely chopped
• Cherry tomatoes
• Salt
For the sauce
• 1 tbsp. Worcestershire sauce
• 1 tbsp. vinegar
• 1 tbsp. brown sugar
• 1 tbsp. "Lof" Extra Virgin Olive Oil
• 2 tsp. sesame
• 1 clove of garlic, crushed
• Pepper
Execution
• Divide the spinach, lettuce and peppers in three medium bowls, add a little salt and mix.
• In a shaker, add the Worcestershire sauce, vinegar, sugar, "Lof" Extra Virgin Olive Oil, sesame, garlic and pepper.
• Beat them until homogenized.
• In a non-stick pan, add the pancettas and sauté for 5-7 mins until they get a light brown color.
• Add the pork pancettas in the vegetable bowl directly from the pan (without the oil).
• Place the onion and rocket on top and pour the sauce over them.
